This is originally a Provencal recipe (it is called pan bagna, which means "bathed bread" I think) and really a kind of food you want to grasp in the sunny summer weather like this! It is very light, easy to make and full of the basic Meditarranean flavours, which I am so fond of.
You will need:
- 4 anchovy fillets
- 4 table spoons of olive oil
- 1 table spoon of white vinegar
- sea salt
- freshly ground pepper
- tomatoes
- red pepper
- spring onion
- hard-boiled egg
- black olives
- baguette or ciabatta or whatever you like (I used tomato ciabatta, because it was the only thing I could get in the evening when coming home from work... sad!)
First, prepare the sauce. Finally chop the anchovy fillets, put it in a small bowl, add olive oil, vinegar, salt and pepper and mix.
Halve the baguette, add some sauce on it, then add chopped tomatoes, red peppers, spring onion, olives and hard-boiled eggs, cover with some more sauce and finally cover with the baguette half.
Leave at least ten minutes, so the flavours can develop, in the room temperature. And enjoy! Bon appétit!
(As you can see, I have also added some parsley, because I like to have at least something green in my food. Makes me feel I eat healthier :))
